It’s elderflower season ! There’s nothing better than foraging for elderflower and making a refreshing cordial for the family to enjoy. The dreamy smell alone from this recipe is enough to make you run for the fields in search for this fragrant flower.
500g Granulated sugar
4-5 Tbsp honey
1 Litre boiled water
2 Large lemons
15 Elderflower heads, stalks removed.
- Place your sugar and honey in a large pan or basin along with the boiling water, stir to dissolve. Add the zest from both lemons, then slice one and squeeze the juice from the other, stir to combine.
- Shake the elderflowers to remove any insects. Allow your water to cool for 5 minutes before adding to the sugar and honey syrup. Cover and leave to stand for 1-2 days, stirring morning and night.
- Strain the elderflower cordial through a muslin and decant into sterilised bottles.
- Enjoy with sparkling water, over ice for a refreshing summer drink.
